Basil, Parsley, Garlic Chicken

Made this for the Beast who is now trying to eat healthy as well.  I googled a few recipes and this one was perfect because I already had all the stuff to make it.  He said it was good.  I cant confirm.  However I can confirm I made a jerk red snapper sunday night, I was so proud of myself, we ate it with a nice spinach salad, the whole reason I bought it was to do a blog on it and after we were done I realized I forgot to take pics.  Damn me :)

4 chicken breasts
1 tablespoon basil
1 tablespoon parsley
Salt & Pepper
4 thinly sliced garlic cloves
1/2 teaspoon crushed red pepper flakes
2 sliced tomatoes 

Heat oven to 350.
Coat baking dish with cooking spray.
Sprinkles spices over chicken on both sides.
Cook for 25 mins then place the sliced tomatoes
over the chicken and bake for another 15 mins or
until its done :)

  1. Another easy one is to take frozen chicken breasts and add enough water to cover the bottom of the pan and cover with a lid until they are defrosted. Then I sprinkly with oregano, add garlic and sprinkle some lemon juice and maybe some greeks seasoning..
    super easy and good... for some reason the frozen chicken breasts are super moist done this way (I buy the super store brand bag of frozen chicken breasts) :)
